Figgy Maple Pudding

Ingredients

  • 10 large ripe fresh figs
  • 3 large dates
  • 2  tablespoons chia seeds
  • 1 1/2-2 cups unsweetened coconut milk
  • 1/2 teaspoon vanilla bean powder

Servings:

6-8

  1. Presoak dates in water for 15 minutes.
  2. Stir 2T chia seeds in 1/4 cup water and let stand for 15 minutes.
  3. Add all ingredients to blender or food processor and blend until smooth and creamy.
  4. Spoon pudding into 6-8 pudding cups. Chill for 1 hour and enjoy.

Note: If using dried figs, presoak for 1/2 hour.
