Do you like meatloaf? It has been well-documented that eating too much red meat can negatively affect your health by raising the risks of type 2 diabetes, heart disease, stroke and certain cancers. So if you’re trying to reduce your consumption of red meat, like I am, perhaps you will appreciate a vegan version of traditional meatloaf. My biggest challenge in creating a meatless meatloaf was I wanted the final product to be nutritionally balanced, and to look, taste and have a similar texture to the “real” thing.
