  • Jicama, also called Mexican turnip, is a great source of vitamin C, potassium, iron and calcium.

Chopped Apple Trio

Ingredients

Salad

  • 2 large apples seeded, cut into eighths and thinly sliced
  • 1 large cucumber seeded, quartered and thinly sliced
  • 1 small jicama peeled, sliced and diced

Dressing

  • 1 cup water
  • 1 large apple seeded and peeled
  • 4 tablespoons coconut manna (pureed coconut)
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons lime juice
  • 1 teaspoon ground mustard

Servings:

  1. In large bowl, combine the sliced apples, cucumber and jicama.
  2. Place dressing ingredients in blender and blend until smooth and creamy.
  3. Pour dressing over salad medley and thoroughly mix.
  4. Enjoy as a side dish.
