Frozen Good Luck Soup

Ingredients

Soup

  • 2 large frozen beef soup bones or your choice of bones
  • 6 cups water
  • 1 cup frozen black-eyed peas
  • 1 cup frozen butternut squash
  • 1 cup frozen chopped onions
  • 1 cup  frozen greens
  • 1 16-18 ounce jar chunky tomatoes

Seasoning

  • 1 large bay leaf
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon lime juice
  • 1/4  teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon each masala garam, thyme, cumin, sage

Servings:

  1. In heavy 4-quart pot, place bones in approximately 6 cups of water and bring to a boil.
  2. Add bay leaf, apple cider vinegar, cover and simmer for 3 hours. After ½ hour, spoon off and discard from the simmering stock any foam that rises to the top, excess fat and skin. Continue simmering.
  3. Remove bones and let cool. Spoon off any additional fat and skin from the top of the broth and discard. Pull off fragments of meat from the bones and place back in pot. Discard bones.
  4. Remove bay leaf. Add other ingredients and seasoning. Bring to a boil then simmer for another 45 minutes.
  5. Ladle into your favorite bowls and enjoy!
