Do you like veggie burgers?
I’ve been on a mission to create a wholesome veggie patty that is delectable and nutritionally balanced. You may be aware that many of the popular fast-food chains and specialty restaurants have come out with their version of the meatless burger. And perhaps you’ve taste-tested some of the choices in the frozen food section of your local grocery store. While many may be tasty, are they really good for you?

I have to be mindful about what I put in my sandwich due to a long list of allergies, like gluten, egg, dairy, garlic and more. Needless to say, my choices are limited. And not only that, I’m concerned about the long list of “food-like substances” used to make the patties resemble the beef burger. If you’ve been following me over the years, you know that I advise my readers to avoid preservatives, thickeners, fillers, starches, and other additives that are difficult to pronounce.

You may think you’ll find a better selection in the health food stores, and while the ingredients may be familiar, I have major issues with the nutritional value. See, I’m always thinking about balance — balance in my life and balance on my plate. For me, the more promising brands have way too many grains, beans and potatoes, and not enough veggies. Pair those grains with sandwich bread, and your meal is basically a mound of excess carbs. Also, the sodium content is way over the top — your maximum allowance for several days.

Have you tried making your own veggie burger? I’ve been working on creating my own vegan patty for a long time. Until now, I’ve not been satisfied with the texture. Experimenting for a firmer texture without adding excess grains, my secret is using more dense vegetables with low moisture content. And then combining the right amount of legumes, grains and veggies so the final product has the right consistency.

I finally got it right!
I am pleased to share a veggie patty recipe that is balanced, nutritious and delicious. My vegan Eggplant Mushroom Burger will satisfy your hunger. And while it doesn’t taste like meat, the flavors are exceptional. Add lettuce, tomato, onion and your favorite condiments, and you’ve got a sandwich that’s worth sinking your teeth into. Consider This
Why is it not a good idea to compromise with a veggie burger? Because you'll never meat in the middle. Ha!
