Prepare A Veggie Meatloaf That's Teaming With Taste, Texture & Nutrition

Years ago, I was diagnosed with multiple food allergies: Gluten, egg, and dairy to name a few. Because I love to cook, I decided to begin creating delicious recipes using alternative ingredients and share them with others. At first, it was challenging to figure out healthy substitutes that resembled traditional recipes. Through trial and error, many of my experiments led to satisfying dishes that were nutritionally superior to the favored recipes of my past.

Do you like meatloaf?

It has been well-documented that eating too much red meat can negatively affect your health by raising the risks of type 2 diabetes, heart disease, stroke and certain cancers. So if you’re trying to reduce your consumption of red meat, like I am, perhaps you will appreciate a vegan version of traditional meatloaf.
My biggest test in creating a meatless meatloaf was aesthetics and nutrition — I wanted the final product to be nutritionally balanced, and to look, taste and have a similar texture to the “real” thing. Also, since I can’t eat egg, I had to figure out how to hold my loaf together.  
As I share the main ingredients, see if you can identify the healthy carbs, healthy fats and protein — the key components of a balanced meal.

Main Ingredients In TK's Vegan Meatloaf

My signature loaf contains chickpeas (AKA garbanzo beans), shiitake mushrooms, green onions, red peppers, celery, carrots, oats, quinoa, and flaxseeds. You may be wondering what binds the ingredients. It’s the seeds and grains. And where is the protein in TK’s vegan loaf? The chickpeas, seeds and grains. Okay, this is definitely a nutritious creation, but does it pass the taste test? The essential seasonings make this meatless loaf come alive.
