- Presoak dates in water for 15 minutes.
- Stir 2T chia seeds in 1/4 cup water and let stand for 15 minutes.
- Add all ingredients to blender or food processor and blend until smooth and creamy.
- Spoon pudding into 6-8 pudding cups. Chill for 1 hour and enjoy.
Note: If using dried figs, presoak for 1/2 hour.
