Mango Mint Salsa


  • 2 cups fresh, ripe mango chopped
  • 1/2 large  yellow bell pepper seeded and diced
  • 1 medium Anaheim pepper seeded and diced; Anaheim peppers are mild. If you prefer hot, try jalapeno peppers.
  • 1 teaspoon fresh mint leaves minced; save a few leaves for garnish.
  • 3 tablespoons red onion diced
  • 3 tablespoons fresh lime juice
  • pinch sea salt




  • Thoroughly mix all ingredients in a bowl.
  • Garnish with mint leaves and chill in the refrigerator.
  • Serve as a side to your main course, soup or sandwich.
