No Bake Apple Carrot Cake

Ingredients

Cake Ingredients

2 large carrots, peeled and grated
1 large apple, peeled and shredded
5 large medjool dates, soaked and pitted
1 ½ cup whole oats
½ cup ground pecans
¼ cup shredded coconut
¼ cup fresh orange juice
1 teaspoon vanilla
1 teaspoon cinnamon
½ teaspoon nutmeg
pinch of clove

Frosting Ingredients

¾ cup smooth nut butter (macadamia and cashew work well for contrasting colors)
¼ cup fresh orange juice
1 teaspoon vanilla
2 tablespoons coconut nectar

Cake Instructions

In food processor, process the softened dates to form a paste.  Then add the rest of the cake ingredients and pulse until thoroughly incorporated. Transfer to a medium springform pan and press mixture evenly with back of large spoon.  Chill in the freezer for ½ hour.

Frosting Instructions

Mix frosting ingredients in food processor until smooth and creamy. Refrigerate for 10 minutes.

Final Steps

Remove cake from freezer.  Lift from springform pan and place on cake plate. Evenly spread on the chilled frosting.  Refrigerate your healthy treat for 8 hours before slicing.
