4 large ripe peaches
1 cup unsweetened, heavy coconut cream, chilled
¼ cup pure maple syrup
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
pinch ground clove
shredded coconut (optional)
1. Peel and core the peaches, then cut them into small pieces. Place the cut peaches on a wax-lined pan and freeze until frozen solid. Make sure the pieces aren’t touching so they will freeze quicker. Prepackaged frozen peaches are available, but fresh peaches are much tastier.
2. Place the frozen peach slices in a food processor and chop until crumbly. Add other ingredients and blend until smooth.
3. Transfer your mixture to a freezer-safe glass container and place in the freezer for 2-4 hours. Less time is recommended for soft serve and more time is needed for hard.
4. Scoop and serve. Sprinkle on shredded coconut for garnish.
