Quinoa Delight



  • 1/2 cup pre-rinsed quinoa
  • 2 ribs celery chopped
  • 1 small carrot peeled and chopped
  • 1/3 cup pine nuts
  • 1/3 cup goji berries soaked in water for 15 minutes or until tender
  • parsley sprigs


  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1/8 tsp sea salt




  1. In a one-quart pot, bring 1 cup of water to a boil. Add the quinoa, stir, cover and simmer for 15-20 minutes. Set aside to cool.
  2. Transfer the cooked quinoa to a mixing bowl, add the next four ingredients and thoroughly combine.
  3. In a cup, mix together the ingredients for the dressing, pour into the quinoa medley and thoroughly mix.
  4. Garnish with parsley sprigs and enjoy.
