Roasted Cauliflower and Squash with Pine Nuts

Ingredients

1 whole cauliflower head
1 medium yellow squash
7 green onions
½ - ¾ cup Italian parsley
2 tablespoons olive oil
½ cup pine nuts

¼ teaspoon sea salt
¼ teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar

Servings:

4-6

  1. Cut the cauliflower into bite-sized florets.  Cut the squash in half then slice into ½ inch chunks.  
  2. Put the cauliflower and yellow squash in a bowl and thoroughly massage in the olive oil.  Line a baking sheet with parchment paper, spoon on the cauliflower and squash, and roast at 350 degrees for 10 minutes.
  3. Remove from oven and add the pine nuts to the mixture.  Broil on low for another 5 minutes.
  4. Remove pan from the oven and put the roasted mixture in a mixing bowl.  Add the green onions, parsley, salt, pepper, lemon juice and ACV.  Mix thoroughly.  
  5. Enjoy warm or chilled.
