  • Parsnip, a root vegetable that is closely related to the carrot, is high in potassium, packed with antioxidants and dietary fiber, and can help control hunger.

Sweet 'N Spicy Jicama Parsnip Slaw

Ingredients

  • 1 large jicama peeled
  • 2 medium parsnips peeled
  • 1-2 tablespoons fresh ginger grated
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons coconut oil
  • 1/2 cup apple juice
  • 1 apple

Servings:

  1. Cut jicama and parsnips into large chunks and shred in the food processor.
  2. Transfer to a mixing bowl and add other ingredients except the apple. Thoroughly mix.
  3. Slice the apple and use as a garnish. Serve as a side to your soup, sandwich or main course.
